The last bit of the salad went into this minted rice salad. Really easy. Mix rice with chopped radish, cucumber, and peas (I used spinach). The dressing is olive oil, lemon juice, shallots, garlic, red pepper flakes (in place of the dried chili), sesame oil, rice wine vinegar, and honey. I think that’s it! Combine and voila – a tasty, light salad. Would go great with chicken or pork.
