I still had three leftover pizza dough balls from my adventure last weekend, so I had put them in the freezer. I decided to make another one this weekend because I need practice shaping pizza. I’ve decided to make one pizza week…it’s a tough job, but someone has got to do it.
I decided to go basic margherita. It’s my favourite. Good tomatoes (that my former partner’s family canned last summer!), good cheese, basil and oregano from the garden. I also thinly slice tomatoes (right now just those cocktail ones from the grocery store) since I like a little more tomato on mine.
It turned out amazing! I am loving the dough recipe from Forkish’s book. It tastes so good, and rises so well in the oven. Lots of air holes in the rim! You can see that my shaping does still need work (I always end up with a couple of areas where the rim disappears), but on the whole, my quest of perfecting homemade pizza has come to an end!
