Interlude: Canal House’s Pronto Marinated Zucchini

My zucchini plant was going crazy this year before it died an early death in a storm while I was away, so I needed a new recipe. Canal House to the rescue!

This is an easy, but tasty, recipe. Basically you fry slices of zucchini in olive oil, then sprinkle them with dressing (salt, garlic, olive oil and wine vinegar). Definite keeper.
