Palestine on a Plate: Lentil and beetroot salad with parsley and sumac dressing

I’ve been on quite the Middle Eastern cooking spree lately. I love the flavours of that region, especially in the dead of winter!

This was a simple salad to make but delivered on taste. There are lentils and roasted beets with a lovely dressing. Looking forward to cooking out of this book more!
