But this soup is simple and tasty. Didn’t take long to make and used up most of my spinach from the garden 🙂
I just sauteed some onions and carrot, added garlic and tomato, then the lentils and stock, and cooked until the lentils were soft. Then added the spinach until it wilted. Voila. Fast and healthy. Definite keeper and you could add anything you want that was about to go bad.
